Camping Quesadillas

One of my favourite no-mess meals to make on the road is Camping Quesadillas!!

You get a delicious meal with very few dishes, especially if you prep your filling at home- which I highly recommend!

Ingredients:

  • 8 Large Soft Tortilla Shells
  • Chicken, beef, or pulled pork(optional)
  • Shredded Cheese (I pack around 2 Cups for our family of four)
  • Bell Peppers
  • Red onion
  • Black Olives
  • Banana peppers or jalapeños
  • Any topping you choose!

Cooking Instructions:

If you choose not to pre-cook your filling at home, you can put your pre-chopped ingredients into Ziploc freezer bags or airtight containers to be stored in the cooler until you are ready to make them to help save time and dishes.

I prep as much as possible at home so meals are easy

Once at the campsite, you will need one large frying pan to cook the filling in, and another pan to fry the quesadillas in, or you can place the quesadilla into a foil packet.

Simply coat the foil with a light layer of oil spray, place tortilla shell down and layer toppings onto half of shell including cheese, then fold in half and seal the foil packet by folding the edges.

Once packet is sealed, place on the campfire, or place shell in frying pan on camp stove and repeat steps for assembling quesadilla.

We brought our Coleman Propane Oven camping so I did ours in the oven for the first time and they turned out great! This is my son’s plain cheese quesadilla, he’s the pickiest eater out of all of us!

Lay quesadilla flat, and add filling of choice
Then fold in half and flip halfway through

Cook until cheese is melted and filling is warmed through, then cut into slices and enjoy!

Delicious quesadilla dinner while camping! Also if you prep the filling at home and use the foil packet method, you have very little clean up!
