Camping Egg Muffins

Have you ever made an omelette in a muffin tin?

These are great to make ahead and then freeze! Put into a ziploc bag or airtight container and store in your cooler until you are ready to heat & eat!

These are great not only for camping, but also for those busy mornings where you literally need breakfast ‘on the go’.

Ingredient Options:

  • Eggs
  • Milk
  • Cheese (flavour of choice)
  • Onions
  • Peppers
  • Spinach
  • Tomatoes
  • Bacon
  • Sausage
  • Chicken (cooked)
  • Seasonings to taste

This time I used the following:

  • 8 Large Eggs
  • 1/2 Cup Chopped Red Pepper
  • 1 Cup Cheese (grated)
  • Splash of milk
  • Pepper (to taste)
  • Bacon

Cooking Instructions:

Grease muffin tin with cooking spray and Preheat Oven to 350C

Cook Bacon until crisp- I did mine on cookie sheets with metal racks for 20 minutes at 400C then flipped the bacon & baked for another 15 minutes.

Cook Bacon until Crispy
Add a splash of milk to your eggs
Add Red Peppers and Grated Cheese
Stir Together with Bacon
Pour into muffin tins & top with cheese

I used a measuring cup to scoop the egg mixture evenly into the muffin tins, then I topped each one with shredded cheese.

Bake for 20 minutes at 350C. This was 10 mins in, looking delicious
These came out of the oven looking sooo yummy!

Storage Recommendations:

Pop them into freezer containers & reheat in the microwave for a minute or so when ready to eat.

They fit well on their sides

This recipe has saved me so much time (and money) and stopped me from going for that unhealthy bagel stop in the mornings.

Instead, I pop one of these in the microwave as I’m filling my to go mug on my way out the door and then I am good to go! Can you say life saver???
